Baked Cooleeney Camembert, Roasted Figs and Grilled Sourdough Bread

What You’ll Need:

  • Cooleeney Camembert
  • Sprigs of Fresh Thyme
  • Pinch of Chili Flakes
  • Extra Virgin Olive Oil to Drizzle
  • 6 Ripe Figs
  • 100g of Butter
  • 4 Large Slices of Good Sourdough Bread

Method:

Place the figs standing up on a baking tray.

Score a cross on the top of the fig ~ 1/3 of the way through it. Insert a nut of butter.

Bake in the oven at 180­°C for 10 to 15 minutes.

Score a deep cross on the top rind of the cheese and insert the 2 sprigs of fresh thyme.

Sprinkle with chili flakes and drizzle with olive oil.

Arrange the camembert in a small baking pot.

Bake at 180°C for 15-20 mins.

Remove from the oven and serve with the roasted figs and some grilled sourdough bread.
